

I am always looking for new ways to get more veg into my families meals, and these were awesome! Although, I'm not sure they still belong in the veg category after what you do to them- they were more like a dessert. But they really dressed up our Sloppy Joe dinner. Don't be afraid to try them even though they sound strange- they are really good and super easy (but don't substitute the Coke with diet or any other variety-- blaugh.) My kids really enjoy them and they've been a hit at many a cub scouting banquet over the years.
Roasted Sweet Potatoes With Honey Butter 4 sweet potatoes,peeled and cut into 1-inch cubes
1/4 c extra-virgin olive oil,plus more for drizzling potatoes after cooking
1/4 c honey
2 t ground cinnamon
Salt and freshly ground black pepper
Preheat oven to 375 degrees F. Lay the sweet potatoes out in a single layer on a roasting tray. Drizzle the oil, honey, cinnamon, salt and pepper over the potatoes. Roast for 25 to 30 minutes in oven or until tender. Take sweet potatoes out of the oven and transfer them to a serving platter. Drizzle with more extra-virgin olive oil.
Mortimer's Sloppy Joes
1 1/2 lb Ground Beef
1 Onion,Diced
1 T Worcestershire
1 c Catsup
6 oz Coca-Cola
Salt And Pepper
Saute onions until translucent in a little olive oil. Add beef and
brown, adding Worcestershire, salt and pepper to season. Drain grease
if desired. Add catsup and Coca-Cola, and simmer until thick (These
amounts are approximate). Serve on hamburger buns with sliced cheese
if desired.
