This recipe is from my Aunt Sherrie who lives in IN (hee hee). She made it for a family reunion once and I've made it several times since then. I love to make it at this time of year when fresh corn is plentiful- about a dozen ears yields the same amount. I also substitute the green pepper with diced anaheim or jalapeno pepper, whichever is growing better in my garden- just decrease the amount so it won't be too spicy.
1 pk Frozen Corn
1 c Green Pepper,Diced
1/3 c red Onion,Minced
2 T Pimentos,Diced
1/2 c Mayonnaise
1/2 t Curry Powder
1/2 t Salt
1/2 t Black Pepper
Combine all and refrigerate.
