Pumpkin Pancakes with Honey Cinnamon Syrup


2C. flour 2T brown sugar
1T baking powder 1/2 t cinnamon
1/4 t ground ginger pinch of ground cloves
1/2 t salt
3 eggs 1 & 3/4C milk
1/2 can canned pumpkin 1.4 veg. oil

In a large bowl combine dry ingredients In a second bowl lightly beat eggs and add remaining ingredients. Stir egg mixture into flour mixture until slightly lumpy. Heat a lightly greased nonstick skillet or griddle. Pour 1/4 c batter onto griddle. Cook pancakes 1-2 minutes each side.
*Note Over mixing the batter makes pancakes Tough. Sit only until a few lumps remain. They'll disappear once the pancakes are cooked.
*Optional you can add pecans and chocolate chips to batter or sprinkle over top of pancakes.


Honey-Cinnamon Syrup
3/4 c honey
1/2 teas cinnamon
1/2 cup butter or margarine
1/2 teas vanilla

In a saucepan heat honey, cinnamon and butter, stirring occasionally until butter is melted and syrup is hot. Remove from heat and stir in vanilla.
