Scandinavian Christmas Cookies

Wow. We actually had a complaint for not posting for too long. So, in response to that holiday cheer (hmmm) here is my favorite Christmas cookie recipe.

1 cup Flour
3/4 cup Powdered Sugar
1/2 cup Butter
pinch of salt
1 Egg
1 tsp Almond Extract
1/4 cup chopped nuts


Mix flour, sugar, butter, salt, egg, almond flavoring, and nuts. Roll in egg white. (I actually usually just brush the tops with egg white). Bake at 350° for 10 minutes.

My favorite variation is to omit the nuts and put half of a maraschino cherry on top. It's fun to do both red and green. You could also omit the nuts from the mix and roll the cookie in them before baking. Or sprinkles. Really, just use your imagination. These also make a good jam thumbprint cookie.
